Prepare the Patties:
- Mix the ground beef, Worcestershire sauce, onion powder, garlic powder, salt, and pepper in a bowl until just combined (do not overwork the meat).
- Divide into 4 equal portions and shape into balls, then flatten into round patties about 1 cm thick, slightly larger than the bun (they’ll shrink when cooked).
- Make a thumbprint indentation in the center of each patty to prevent puffing up.
Preheat and Cook:
- Preheat your grill or skillet to medium-high.
- Place patties on hot grill or pan.
- Cook for about 4-5 minutes per side, or until the internal temperature reaches 150–155°F (65–68°C) for medium-well.
- Add cheese in the last minute of cooking and allow it to melt.
Toast the Buns:
- Spread cut side of buns with butter, toast until golden either in a pan or on the grill.
Make the Sauce:
- In a small bowl, mix ketchup, mayonnaise, mustard, relish, and black pepper to taste (adjust ingredients as preferred).
Assemble the Burger:
- Spread some sauce on the bottom bun.
- Add lettuce, tomato, and onions.
- Place the beef patty with melted cheese on top.
- Top with pickles, more sauce, and the bun lid.
- Serve immediately.
Notes
For best flavor and juiciness, use freshly ground beef with 20% fat, don’t overwork the patties, and let them rest a few minutes after cooking!. Customize toppings as desired: sautéed mushrooms, blue cheese, jalapeños, or caramelized onions are all excellent additions. Toasted buns keep burgers from becoming soggy and add extra crunch.
